He’s worked at some of the most prestigious hotels and restaurants in Canada.
Executive Chef Cameron Bryce wields skills honed from 14 years of food preparation and design in such kitchens as the five-star Eden Dining Room in the Rimrock Hotel in Banff, and the fine-dining Auberge du Pommier in Toronto.
Today, he and his talented culinary team are serving up international foods with local flavours at Delta Guelph’s Fifty West Restaurant and Bar. And the kitchen is humming. It takes passion and energy to deliver fine foods in a restaurant which seats 120 people, adding another 65 in the summer with a patio. But they do it. Every day.
His creativity for blending what’s grown right here with an understanding of what people are looking for arrives at artfully presented, aromatic dishes to tempt the most discerning palate. Consider the themed “table d’hôte” menus, three courses of local fare that reads like a “who’s-who” of fresh tastes: Ontario Seafood, the 100 Mile Diet, the Wellington County Steak Fest. He is on a mission to provide his guests with a direct farm to fork experience, and by example is helping to support the farmer. Not surprising then that Fifty West Restaurant and Bar partners with the local food movement known as taste•real in a concerted effort to showcase the wholesome foods our farmers grow. Also not surprising is that word has gotten around. On Saturdays, Chef Cameron’s been known to select his day’s artisanal veggies from the farmer at the restaurant’s back door.
